Open up that fridge and see what you have. You might be surprised that you have an amazing breakfast staring you right in the face and you didn't even know it.


Over our lifespan we have been roped into the mind-frame through some incredible marketing, that we can only eat certain things at certain times of the day. Why? Because marketing has led us to believe that cereal and toast is what you should be having for breakfast. I'm so done with that.


It's time to open your options. Your breakfast experience will come to life!


No eggs in the fridge this morning? That's okay! What do you have?


Now there's a breakfast to brag about!

Sometimes I miss my old favourites, which inspires me to think outside of the box. And sometimes, a little creativity is all you need.


Ingredients

3 hard-boiled eggs

2 green onions/scallions

1 Tbsp of mayonnaise made with avocado, extra-virgin olive oil or a homemade paleo version

Salt & Pepper to taste

1/2 sweet potato cut into rounds (or lengthwise if you prefer them bigger)

Enough oil to brush onto sweet potato slices


Directions

Brush sweet potato slices with oil (avocado oil, coconut oil or extra virgin olive oil) sprinkle with a pinch of salt.




Place sweet potato slices onto a baking pan and broil on high for 3-4 minutes (top rack) until golden. You could also use a toaster oven instead if you have one. Flip the sweet potato pieces and continue broiling for another 3-4 minutes until golden on both sides.




In a separate bowl, slice hard-boiled eggs into little pieces. Add mayonnaise, and chopped green onions. Add salt and pepper to taste.




Scoop your egg-salad onto your sweet potato slices sandwich-style! Enjoy!

Soup. Did you say apple pie soup? Yes! You read that right!



Truth be told... I really wanted a slice of apple pie. So, I decided to come up with another Zesty Creation of my own, that would fit my lifestyle, yet satisfy my apple pie cravings - and I managed to do just that!!


This full-fat bowl hit the spot just the way I hoped it would. I will be sure to make this one again!!


Ingredients

1/4 cup of pecan pieces

1/2 tsp or cinnamon or pumpkin pie spice

1 small apple, cut into thin slivers

2/3 c. Full Fat coconut milk



Directions:

Place pecan pieces & cinnamon (or pumpkin pie spice), into a microwavable bowl. Microwave for 30 seconds, stir.

Add apple slivers into the bowl (stir in with pecans & spices)

Microwave another 30 seconds, and stir again.

Add in the Full Fat coconut milk with all other ingredients, stir and microwave one last time for 30 seconds.


Voila! This healthy, full-fat beauty will keep you going for hours!
